What is Warayaki?

“Warayaki” is a cooking method in which the surface of the bonito meat is roasted by setting fire to bundles of straw when making bonito tataki.
The hollow straw in good condition instantly ignites at a high temperature of 800 degrees, allowing only the surface of the bonito to be roasted.
By grilling the surface of the bonito with a high-temperature flame all at once, the umami of the bonito is tightly confined.
By preventing heat from penetrating the inside of the bonito, it is possible to maintain the freshness of the bonito.
Straw-grilling is a cooking method that brings out the best of the ingredients.
