Temperatures are gradually getting warmer and warmer, and we can feel the arrival of spring in full swing.

Speaking of such a spring delicacy...of course, it is "bamboo shoots!
We have prepared a unique spring dish using bamboo shoots.

◇ ◇◆ Simmered young bamboo shoots

Seasonal bamboo shoots are seasoned with Nishiie's traditional Soda bonito flakes and Uru-me flakes,
Slowly simmered in a broth made from mackerel bones.
This dish is simple, but you can feel the flavor of the dashi broth that is packed into the dish.

Japan, where we live, has four seasons,
Each season has its own annual events that add color to our lives.

Food is no different. Each ingredient has its own season, and each season brings a sense of the four seasons to our lives.
