What is Straw Grill?

Straw-roasting" is a method of cooking bonito by searing the surface of the bonito meat with a bundle of straw that is set on fire when making bonito tataki.
Hollow straw in good condition can instantly burn up to 800 degrees Celsius, searing only the surface of the skipjack.
The surface of the bonito is grilled at once over a high-temperature flame to lock in all the bonito's flavor.
